It is always the season for Harry Potter, but especially now with all the holiday movies airing on TV through the new year. Fall is also the perfect time to use these ingredients and to snuggle up with one (or seven!) of the best books ever. This recipe for iced pumpkin juice is completely inspired by J.K. Rowling and all the fandom surrounding her novels.
- 1/2 cup pumpkin juice (from juicer or 1/2 puréed pumpkin)
- 1/2 cup pineapple juice
- 1 cup apple juice ( I used honeycrisps)
- 1 tbsp honey
- 6 cups ice
- 1/2 cup vanilla yogurt
- whipped cream
- cinnamon sugar
Combine juices, honey, ice, and yogurt in a blender. I used coconut milk yogurt, but you can use any kind you prefer. You could even use something thicker, such as cream or ice cream, if you are looking for more of a shake consistency. Blend until smooth. Serve in glasses and top with whipped cream, cinnamon sugar, and a book. Cheers!
