This is a little alternative to Peppermint Chocolate Bark because I know some people who don’t particularly like the flavor of mint. So I like to make this Lemon Citrus Bark because citrus is also a seasonal holiday flavor and also loved by many.
- 1 lb. white melting chocolate
- 1/2 tsp. citrus zest (lemon, orange, lime, tangerine, grapefruit)
- 1/4 cup crushed lemon drops
You can use any kind of citrus zest that you like. Today I used some tangerine zest because our tangerine tree is going nuts!
Melt and temper your chocolate by using the double boiler method. In a larger pot, fill a quarter of the way with water and simmer. Remove from heat and place a smaller pot filled with your chocolate in the larger pot. Continuously stir until all chocolate is melted.
This method is a great way to prevent burning your chocolate and ensuring that you retain the beautiful slick look to your chocolate.
Once chocolate is melted, place a sheet of parchment paper on a smooth surface and pour chocolate in the center of the paper. With a spatula, spread chocolate out to about 1/4 inch thickness. While chocolate is still warm, sprinkle crushed lemon drops over the surface. Allow to cool for about 20-30 minutes until chocolate is firm. Use a knife or your hands to break apart chocolate in to bite size pieces.
